A steel frame built for the top you choose: oak, HPL compact, concrete or glass. Galvanised when it lives outdoors.
Grill width from 60 centimetres to a metre and a half, in 3, 4 or 6 mm steel. Open, with a lid, or with a chimney when the smoke bothers the neighbours or drifts into the pergola.
Two-millimetre sheet warps by the third fire: the walls bow out and the lid stops closing. 3 mm is the minimum for a holiday house, 4 mm is the working thickness, and 6 mm holds its shape for years and heats evenly — but two people can no longer carry it.
A lid holds the heat and lets you roast rather than only grill. A chimney matters when the grill stands against the house wall, under a canopy, or close to a neighbour window: without one the smoke goes where people sit.
The inside is never painted or galvanised — at four hundred degrees any coating burns off and ends up in the food. Heat-resistant enamel goes on the outside; inside it is bare steel that scorches on the first fire and works as it is from then on.
